Homeway Subway : recipe-ish






So an ad for subway came on telly a couple of days ago and I thought 'ooooo wouldn't mind one of those, haven't had one fer yonks'. Only problem there is the nearest subway is a bus ride away, not feelin it. So I decided i'd make some homemade ones :]

Here's what you need for the chicken marinade:

2 large chicken breasts cut into 6 pieces
4 tbsp Nandos medium piri piri sauce
2 tbsp nandos sweet chilli piri piri
a good pinch of mixed herbs
1 level tbsp turmeric
4 tbsp soy sauce
1 tsp balti curry paste
1 tsp brown sugar
2 tbsp ketchup
fresh ground black pepper
1 maggi stock cube (the small teeny squares)
a few drops each of maggi not and normal liquid seasoning
1 tsp ground corriander

Mix everything in a bowl and either leave it in the fridge overnight or if you're in a rush you can shove it in the oven straight away. i know it seems like a LOT of seasoning lol but trust me it works wonders, you should see the state of our spice cupboard :S anyhoo, leave it to cook turning over halfway, when it's cooked (I dunno, maybe half an hour, i never time these things) slice it into strips.

Spread some guacamole on one side of the sub, tomato salsa on the other and add anything else you fancy, I used lettuce and cucmbers in mine *drools* cuuuuccuummbbeeerrr o.O so gooood lol And you're good to go :] You can get sub rolls from M&S. They also have a set of 3 dips which come together in a long container, guacamole, sour cream and chive and tomato salsa. I used the guaca/salsa from there, tastes amazing!
