no fuss chicken courtesy of Mr Marks and Miss Spencer







Last night's dinner was very speedy and effortless :] Here's how you can do it too if you're in a rush or just want a stress night of cooking.

6-8 chicken pieces
A jar of Marks and Spencer hot and smokey fajita paste (use 3 quarters)
2-3 large bell peppers
3 onions
3 cloves of garlic
2 tablespoons rich dark soy sauce
1 tsp Ras El Hanout
A generous pinch of mixed herbs
A generous drizzle of olive oil

You literally mix everything together in a big plastic bowl and bung it in a pre-heated oven at gas mark 5 for 45-60 mins....sorted!

It's quite spicy and goes great with rice any any other quick sides you fancy.

I know it's meant for fajitas but you'd be surprised how many different things you can make with jar pastes and sauces. E.g, when I'm making cottage pie and I want it to be as speedy as possible, I'll use a jar of bolognese sauce instead of making my own from scratch, and it tastes just lovely!

My secret weapon for any bolognese sauce is a teaspoon of Ras El Hanout, small pinch of cinnamon, a dash of soy sauce and a couple of bay leaves, gives it some kick without dramatically changing the flavour. It actually tastes better but then again I hate bland food. I can't cook something solely relying on a stock cube and some salt and pepper for seasoning. I'm north african, it doesn't fly with me lol
